When the days are getting longer, and it smells like spring, it’s time to add some variety to your diet. You can cook lovely and healthy meals using seasonal vegetables, greens and fruits.

Spinach contains protein, fiber and vitamins, which is great for a side dish. Small leaves of young spinach can be eaten raw, and larger ones are better stewed.

Baked radish salad

We love radish, one of the main spring plants, at least for a bright color. In addition, it contains a number of useful elements, including potassium, magnesium, iron and fiber. In fact, this is the first of our healthy spring recipes!

Ingredients:

  • 20 radishes
  • 2 tablespoons of olive oil
  • 100 grams of corn salad
  • half a cup of pine nuts
  • 4 tablespoons sour-cream
  • mint
  • salt
  • pepper

Cooking:

  • Preheat the oven to the maximum, and cover the baking sheet with cooking paper.
  • Then, cut the radish in half, add a teaspoon of salt and olive oil, and mix it all. Place it on a baking sheet and bake for 10 minutes.
  • Cool radishes. Chop the mint leaves and mix with sour cream and a bit of olive oil. Add salt and pepper.
  • Put the salad corn on a plate and add the radish. Pour with dressing and add pine nuts.

Avocado Mousse with Smoked Salmon

The second of our healthy spring recipes! Avocado is perfect in soups, salads and desserts. By the way, during the spring, we recommend buying avocados from South Africa, where their season begins in April.

Ingredients:

  • 200 g smoked salmon
  • green onions
  • 2 tablespoons of olive oil
  • lime juice
  • salt
  • pepper
  • 4 avocados
  • a bunch of wild or regular parsley
  • 3 cups of natural yogurt

Cooking:

  • Make an avocado mousse: cut the fruit into two parts, mix the pulp with yogurt, parsley, half lime juice, salt and pepper. Put in a large container, cover with film and refrigerate.
  • Chop smoked salmon, mix it with chopped onion, olive oil, half lime juice and pepper.
  • Arrange the cooled avocado mousse in four glasses, laying smoked salmon on top. Serve with fresh bread.

Pea soup with spinach and mint

Bright green spring soup seems filled with vitamins. Still, mind that seasonal avitaminosis does not exist, and people with a real avitaminosis need more serious treatment than soup.
